This simple smoothie is full of fresh fruit, but that’s not the only reason to give it a try. Leticia Moreinos Schwartz, author of the cookbook My Rio de Janeiro, says this is also a delicious piece of her hometown in Brazil, where pineapples are sweet as honey. This mint and pineapple smoothie recipe is easy to make at home for an instant morning pick-me-up. It doesn’t require any exotic ingredients or techniques, and the combination of pineapple and mint packs this refreshing drink with a blast of brightness. Pick a fruit that feels heavy for its size, has a fresh fragrance, and gives slightly when pressed at the base. Moreinos Schwartz says the vendors at the market in Rio tap on the pineapples, searching for the sound of ripeness, like a full drum compared to a hollow one—and that’s how she picks her pineapples too.
