Since Meghan Markle and Prince Harry announced that their recent engagement took place over roast chicken, the internet has once again been all atwitter about Engagement Chicken, a recipe created by a Glamour editor in the 1980s that supposedly makes boyfriends propose to their girlfriends.
Whether or not the marvelousness of Markle's roast bird had anything to do with Prince Harry popping the question, I think we can all agree that food—making it and eating it—can do a lot to further a relationship. But if you're just in the beginning stages of dating someone, maybe you're not ready to stick your hand in a raw poultry cavity for love.
But let's say you have hit it off with a lovely human. You've been on three dates, and suddenly you're waking up together at your apartment for the first time. First of all, congratulations! Second of all, don't panic, but it would probably be a nice idea to offer the lucky lady or gent some breakfast. And for that, we recommend the Third Date Egg Scramble.
Look, it's not out of the question that you'll be a little bleary-eyed and hungover on this particular morning. Doing something show-offy, like an omelet, is not going to go well for the casual home cook. And you don't want to make something that requires a significant amount of time over the stove, like pancakes, because, duh, you're hungry. You also don't want to have to leave the house to get ingredients, so sticking with fridge staples is key. And you may not even know this person's dietary restrictions yet, so you should keep it simple. And that is why you're going to make an egg scramble and toast. And coffee. Don't forget the coffee.
Making breakfast for someone is nice, sure, but it's also a really good way to signal that you like—no, like like—this person. And it will almost definitely ensure that your new hookup buddy will text his or her friends that, at the very least, you are extremely cute.
Third Date Egg Scramble
It's important to note that the vegetables here are suggestions—any quick cooking vegetable or protein will do. Onions, kale, black beans, bell peppers, or thinly sliced summer squash would all work well.

Rinse spinach, chop tomatoes, and mince garlic.
In a nonstick pan, melt one tablespoon of butter over medium heat. Add chopped tomatoes and salt and pepper to taste. Sautee for 5 minutes, until tomatoes start to break down. Add minced garlic, and stir to combine. Sautee for 3 minutes. Add spinach at the end, till barely wilted. Transfer all contents to a bowl, and wipe out pan.
Crack the eggs into a bowl and whisk till the yolk is broken up and the egg is combined. (This is also a good time to pop your bread in the toaster. Maybe ask your new friend to do that when they ask what they can do to help. Which they should ask.)
Melt butter in a nonstick pan over medium until the pan is very hot. Pour in egg mixture. As eggs set, use a spatula to pull the eggs across the pan in different directions. Add in tomato and spinach mixture before the eggs fully set—this will happen quickly, so move fast—and combine. When set to your liking, remove from heat.
Pull out two small plates (or, better yet, wide shallow bowls) and divide the scramble between them. Slide your toast beside it. Shower the eggs with parmesan. Offer salt and pepper for the scramble. Offer butter for the toast. Eat with the person you kinda really like.
