Cilbir, pronounced chill-ber, is a Turkish breakfast dish traditionally made with poached eggs in tzatziki-esque yogurt and drizzled with spice-infused melted butter. Yes, butter with red pepper and paprika. We’ve replaced poached eggs with an over-easy fried egg, so you can still savor rich, runny yolk to mix into your garlicky yogurt as you eat, minus the fuss. Cilbir with Fried Egg

Infuse the yogurt. Stir together Greek yogurt, dill, parsley, garlic, lemon juice, and salt in a bowl. Refrigerate while preparing the rest of the dish.
Fry the eggs. You already have your favorite method for this.
Spice up the butter. Heat a saucepan over medium heat. Melt the butter with crushed red pepper and paprika, stirring frequently.
Assemble it. Divide the yogurt between 2 bowls. Top with a fried egg, drizzle with spiced butter and sprinkle with coarse salt, dill, and parsley.
