Mark Canlis, co-owner of Seattle restaurant Canlis, is the mastermind behind these three-egg omelets. Although he crafted this play on a “hangover breakfast” long before he could even legally drink alcohol, this ain’t a dish for the kiddos. Here, the omelet moves to the edges of your plate so Canadian bacon can steal the spotlight. Slices are laced with whiskey and brown sugar, delivering tons of sweet caramel and savory maple flavors.
