This year, mix it up with sugar-and-spice nuts. You’ll only need four ingredients: Chinese-five spice, cinnamon sugar, egg whites, and mixed nuts. Think of Chinese-five spice as the pumpkin spice of Christmas. It’s a combination of many winter spices like star anise, cloves, Chinese cinnamon, Sichuan pepper, and fennel seeds. The cinnamon sugar adds a touch of sweetness to the spiced nuts, so you get the best of both worlds. It’s also easy to make in big batches. Just make sure to spread the nuts in a single layer without piling, or else they won’t dry out evenly in the oven.
Preheat the oven to 275°F.
Toss together the five spice and cinnamon sugar in a small bowl. In a large bowl, whisk the egg white until foamy, add the nuts, and toss until coated. Add the spice mixture to the bowl and continue tossing until all the nuts are well coated.
Spread the nuts in an even layer on a baking sheet and bake for 20 minutes, tossing halfway through. If the nuts are still a little wet, continue baking until completely dry, checking every 3 to 5 minutes.
